Roasted Bread with Broccoli & Zucchini

leftover bread or stuffing

broccoli (2 - 3 heads)

10oz / 280g

zucchini squash (1 - 1.5 pieces)

5oz / 140g

onions (1 large piece)

  1. If you are using bread and it is not cut yet, cut it into bite size chunks, dice onions, slice zucchini squash and separate broccoli into small roses.
  2. Put oil in a pan on medium-high heat, once the oil is hot, add onions and sauté 1-2 minutes until they are translucent.
  3. Add the broccoli and sauté for 4-6 minutes, potentially with a lid and a few Tbsp of water, until it starts to get soft.
  4. Add zucchini, garlic salt and pepper, mix everything well and sauté for another 2-3 minutes until zucchini are tender as well. Take vegetables out of the pan and set aside.
  5. Add a little bit more oil to the pan and add the bread pieces or the stuffing. Roast for 2-3 minutes until it starts to brown, stir slightly.
  6. While the bread roasts whisk eggs. Pour eggs over bread and roast everything together until the egg is firm.
  7. Add the vegetables back into the pan and mix everything well. Serve hot.
