Denver Frittata

Frittata recipe

for 4 portions:



5.5oz / 160ml


3oz / 80g


10oz / 280g

red bell peppers
(2 pieces)

7oz / 200g

(1 piece)

5oz / 140g

american cheese

1/4 tsp

ground nutmeg

1/2 tsp




  1. Peel and dice onions. Remove stem from bell pepper and dice. Dice cheese and ham.
  2. Put eggs, milk, salt, pepper and nutmeg, if desired into a bowl or measuring cup and whisk well until eggs are well beaten and combined with milk.
  3. Heat oil in a pan (that has a lid) over medium-high heat. Once hot add onions, sauté for 1-2 minutes until translucent. Add bell peppers and sauté for 2-3 minutes until they start to soften. Add ham and continue cooking for another 2-3 minutes to slightly brown the ham.
  4. Turn heat down to low(-medium), add the cheese, mix well and distribute mixture evenly over floor of the pan. Shortly whisk the egg-mixture again and pour it into the pan, so that it covers the veggies, ham and cheese.
  5. Cover the pan with a lid and let it cook on low(-medium) heat for about 15 minutes until the bottom is browned and the egg is cooked (not runny when knife is inserted).
  6. You can serve the frittata with a piece of bread, some salad or eat it on it's own. Sprinkle with fresh pepper, if desired.
