  1. Measure all ingredients and wash all produce. Add bread crumbs and milk into a large bowl and set aside.
  2. Put rice and water into a pot and turn heat to high to bring to a boil. As soon as it boils, turn heat down to lowest setting, cover the pot and keep it covered until all the liquid is soaked up and the rice is tender, typically about 15 minutes. If it is not tender when all the liquid is gone, add a couple Tbsp of water and continue cooking.
  3. Peel and dice onions. Peel and mince or press garlic. Tear or cut lettuce into bite size chunks. Cut tomatoes into large cubes. Remove stem from bell peppers, quarter and slice. Combine lettuce, tomatoes and bell peppers in a bowl.
  4. When the bread crumbs are well soaked with milk, add ground beef, onions, garlic, eggs, dried marjoram, half the salt and half the pepper into the bowl. Mix well, first with a wooden spoon then with your hands.
  5. Once the rice is done add it to the beef mixture and mix well.
  6. Heat oil in a large pan over medium-high heat. Form patties and add them to the pan. (You might have to do several batches, if so add more oil for other batches.) Sauté patties for 3-4 minutes on one side until they are browned. Carefully turn them over (because of the rice, they are more crumbly than regular patties). Continue cooking for another 2-3 minutes on the other side. Take them out of the pan, put them on a paper towel and cover.
  7. Put remaining salt and pepper together with olive oil and balsamic vinegar into a glass or a small bowl. Whisk well with a fork or an eggbeater until oil and vinegar are combined. Pour over lettuce-tomato-bell pepper mixture.
  8. Portion out salad on plates and add patties on top (2-3 per portion). Serve.
