  1. Preaheat oven to 425°F (210°C). Line a baking sheet with parchment paper or aluminium foil.
  2. If not done, cut pork into portion size pieces. Peel potatoes and carrots and cut them into thick slices. Cut leek into slices.
  3. Season pork with half the salt and the pepper on both sides. Arrange pork, potatoes, carrots and leek on baking sheet. Keep pork separate, the veggies can be mixed up if desired.
  4. Mix sour cream with rest of the salt and the pepper and distribute it over the potatoes, carrots and the leek.
  5. Cover baking sheet with aluminium foil and place it in the oven. Roast for 10-15 minutes.
  6. Remove aluminium foil, stir vegetables and continue roasting until pork is cooked through (internal temperature of 160°F/70°C). Depending on the thickness of the pork this will take another 10-15 min.
