Salmon Avocado Wrap with Sauce

Wrap recipe

for 4 portions:

8.5oz / 240g

flour tortillas
(8 small pieces)

7oz / 200g

smoked salmon

19oz / 540g

avocados
(2-3 pieces)

2 tbsp

lemon juice

1.5oz / 45g

scallions
(3 pieces)

3 tbsp

yellow mustard

3 tbsp

honey

3 tbsp

balsamic vinegar

4 tbsp

olive oil

1/4 tsp

salt

1/4tsp

pepper

  1. Cut avocado into slices. Sprinkle with lemon or lime juice (mainly to avoid getting brown). Cut scallions into slices.
  2. Combine yellow mustard, honey, balsamic vinegar, oil, salt and pepper in a small bowl or glass and whisk well until all ingredients are combined.
  3. Prepare the wraps as per instructions on packaging, usually 45 seconds in the microwave in between damp kitchen towels or 30 seconds each side in a slightly oiled pan.
  4. Put salmon slices on each wrap. Sprinkle with the sauce (not all of it, to avoid drippy wraps, serve rest of the sauce on the side).
  5. Line up avocado pieces in the middle of the wrap and scatter scallions over them.
  6. Roll wraps and enjoy.
